Dear Diary 8/13


Today marked Day 80 of the run streak! Wow. In some ways, it doesn't seem possible that 2.5 months have gone by already but there are parts of my body that would tell you "WE'RE FEELING IT". There is no doubt I am pushing outside my comfort zone but with less than a week to go before I start the taper for the Disneyland Half, I'm not letting up. One more speed work session of 12 x 800's on the schedule for Thursday, followed by a 2 part 15 miler on Saturday. As usual, I'm anxious about the 800's. I just have to keep reminding myself that when I did 8 of them, I wondered how the heck I was going to do 10. When I did 10 x 800s, I wanted to quit soooo badly after only 4, but I held on, kept believing in myself and my training program - and I did it! I know I can make it through 12 repeats but what I may not live through is the anticipation! :-)

Over the past weekend, my trail running partner and I hit a local 9+ mile route we hadn't done before. This route had us climbing 2,000 feet over the first 6 miles. It was spectacular!  We didn't see another human until about an hour or so into our run.



Green Smoothie recipe of the week:

Looking for a great "Breakfast for Two"? Try this kale, mango, strawberry smoothie!

10 oz unsweetened vanilla almond milk
2 handfuls fresh kale
1 c frozen mango
2 c fresh strawberries
2 T ground flaxseed
1 c ice

I like to blend the kale and the almond milk together in my Blend Tec first and then add the remaining ingredients. Otherwise, the kale takes up too much room in the jar.


I'm excited for the 2nd meeting of the Vegan Mainstream Cookbook Club tonight in a Google+ hangout. Dreena Burton is the featured chef and she'll be talking about fresh herbs (the theme for August), spreads and sauces. YUM!

If you blend the milk and kale separately, does that make the kale blend up smaller so that the smoothie is less...leafy? How do you do that?

Hey Will! I use a high powered Blend Tec blender that will pretty liquefy anything you put in it. The kale takes up so much volume in the blender jar, I like to puree the greens first and then add the fruit, etc. The more you blend those greens, the less leafy they will be for sure!
